One of my go-to's during eating season 😁 Here's how I make mine:
1/2 cup quinoa, rinsed and cooked according to package instructions
1/2 cup chickpeas, drained and rinsed
1/2 cup cucumber, diced
1/2 green bell pepper, diced
Zest of 1 lemon
1/4-1/2 cup feta cheese, crumbled
Optional
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
green onions
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 clove garlic, minced
pinch of onion powder
Salt and pepper, to taste
Prepare Quinoa: Cook the quinoa according to the package instructions. Once cooked, fluff it with a fork and let it cool to room temperature.
Prepare Chickpeas: In a large mixing bowl, combine the cooked quinoa and chickpeas.
Add Vegetables: Add the diced cucumber, green bell pepper, lemon zest, crumbled feta cheese, parsley, and mint to the bowl with quinoa and chickpeas.
Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, minced garlic, onion powder, salt, and pepper.
Combine and Toss: Pour the dressing over the quinoa mixture and gently toss everything together until well combined. Adjust the salt and pepper to taste.
Give the salad a final toss and garnish with additional mint leaves and lemon zest if desired.
